The pastry chef
Michelle Hernández grew up in the Bay Area, studied at UC Berkeley, then trained at Le Cordon Bleu in Paris and in Michelin-starred kitchens. She came home, started as a street vendor in 2011, ran Mission pop-ups for eight years, and opened the Potrero Hill flagship. She still bakes the early shift. The work is botanical by design — flowers, herbs, teas, cacao, and honey woven into French technique.
